It is a fresh cheese with soft and creamy texture, with a thin and white rind, which tends to become yellow as the cheese ripens. Its perfume and flavour are delicate, with hints of freshly drawn milk. Pecorino di Pienza is perfect in any occasion, by itself or in simple recipes, as well as with seasonal fruits.
