Ingredients:
Sardinian gnocchi (desired quantity)
200g of fresh sausage, peeled and crumbled
A pinch of saffron
1 onion, finely chopped
Salt and Pepper To Taste.
Chopped fresh parsley (optional)
Method:
In a pan, heat some olive oil and add the chopped onion. Fry until golden.
Add the crumbled sausage to the pan and cook until nicely browned.
Add the saffron to the pan and stir well to distribute evenly.
In the meantime, cook the Sardinian gnocchi in plenty of salted water following the instructions on the package.
Drain them al dente and add them to the pan with the sausage and saffron. Mix well to blend the flavours.
Add salt and pepper to taste and, if you prefer, sprinkle with fresh chopped parsley before serving.
