Occelli al Barolo is a luxurious Italian cheese that combines the richness of cow’s and sheep’s milk with the robust flavours of Barolo wine. This unique cheese is crafted by renowned cheesemaker Beppino Occelli in the Piedmont region of Italy, a region famous for its fine wines.

The cheese is semi-hard and has a rich, creamy texture that becomes more crumbly with age. What truly distinguishes Occelli al Barolo is its ageing process. The cheese is aged for several months and then coated with the must (the leftover skins, seeds, and stems) of Barolo wine grapes, one of Italy’s most prestigious red wines. This imparts a deep, wine-infused flavor and aroma to the cheese, along with a visually striking dark, purplish rind.

The interior of the cheese is pale yellow, contrasting with the deep colour of the wine-soaked rind. The flavour is complex and intense, with the fruity, tannic notes of the Barolo blending harmoniously with the rich, buttery, and slightly tangy taste of the cheese. The wine must also adds a subtle sweetness and a hint of earthiness, making each bite a layered sensory experience.
