Its name comes from the type of ageing, wheels are naturally matured for 4 months and then put into old oak barrels and covered with Brazilian black pepper, which has a long-lasting and delicate flavour, for a further 8 months. It is a friable,slightly spicy cheese with a delicate and very fascinating aroma. Cow milk.
