Casera is a semi-hard cheese from the Valtellina region in Lombardy, northern Italy. Made primarily from cow’s milk, it is a key ingredient in the traditional dish Pizzoccheri. Casera is aged for at least 70 days, during which it develops a mild, buttery flavour with sweet, nutty undertones and a smooth, slightly elastic texture. As it ages, the flavour intensifies, becoming more robust and savoury, and the texture becomes firmer.

The cheese has a pale yellow colour with small, irregular holes throughout.

Casera is versatile and can be used in cooking, especially in melted dishes, or enjoyed on its own or in sandwiches. It embodies the rich dairy traditions of the Alpine regions.
