Pearled spelt is an ancient type of whole grain wheat, often confused with spelt grain. It is traditionally used in Italy to make soup, has a good chewy texture and a nutty flavour. It is also very low in gluten and is tolerated by some people with gluten allergies. Very rich in vitamins, fibre and minerals.
