Colomba (Italian for “dove”) is a rich and fluffy dove-shaped cake traditionally eaten in Italy at Easter time. It’s made thanks to high-quality ingredients and a very long leavening time. After rising, the dough is then baked into a dove-shaped paper baking mould.
Natural yeast is the secret of Vergani’s excellent Colomba cakes. Even today, Vergani’s pastry chefs use the natural sourdough starter created by founder Angelo Vergani in the past. They keep it tied in a cloth, and they refresh it 3 times a day, every day, as the true Milanese tradition dictates, for over seventy years. It takes them a good 3 days to make a Colomba cake.
