Gran Reserva represents the most ancient rural tradition in Tuscany. The cheese wheels were produced in spring, during the period of abundance of milk and, after a long ripening process, they became part of the farm family’s provisions. Even now, Gran Reserva Pecorino cheese is produced in March, April and May when milk is rich in taste and aroma. The rind is yellow coloured, the texture is compact and soft when cut. Its complex and intense perfume reveals a bold and persistent flavour.
