Valpolicella Ripasso Classico is produced in the province of Verona, in a hilly area. The bunches are selected, harvested and transported to the cellar. Here they are vinified by applying the Ripasso technique, i.e. during the racking phase the wine is refermented (from here passed again) on the exhausted pomace of Amarone or Recioto. This practice brings a character of aromatic complexity and structural thickness superior to those of a normal Valpolicella. At the end of its journey, the wine matures in oak barrels for at least a year. A further period of refinement in the bottle makes it ready for marketing.
Ruby red colour with garnet reflections. The aroma is intense and vinous, with notes of berries and cherry, followed by withered flowers and eucalyptus. On the palate, it is firm and dry, pleasantly soft.
