Gorgonzola is one of the world’s oldest blue-veined cheeses. It’s a soft, blue, buttery, Italian blue cheese with the word “Dolce” meaning “Sweet”. The cheese originates from the 12th century where it took its name from a small town in Lombardy near Milan. This is a pale and incredibly soft cheese with speckled blue veins running throughout. Traditionally “blued” and ripened in rooms known as “purgatory”. It takes a minimum of 45 days ageing to let Gorgonzola demonstrate its unique characteristics. Pasteurized cow’s milk.
