Pecorino table cheese with straw-yellow ridged rind, slightly cracked semi-cooked paste with small pieces of truffle inside. Tasty and spicy soft cheese with the typical truffle aroma. It has a strong and intense flavor as it matures. The colour of the paste is white or slightly straw yellow as it matures.
The techniques underlying its processing have remained the traditional ones held by the shepherds. The island’s dairy knowledge, combined with rigorous compliance with hygiene regulations and modern technology, allow to obtain this pecorino, safe and rich in the variety of flavours and aromas characteristic of Sardinia.
Seasoning: At least 60 days.
Conservation methods: The product maintains its optimal characteristics (chemical-physical, microbiological and organoleptic) if kept at a temperature of +4°/+8°C.
Pairings: Mature red wines, with an intense bouquet, soft and warm, full-bodied and with good, intense aromatic persistence.
Tasting: It can be consumed at the beginning or end of a meal.
