Risotto with Gutturnio and Gorgonzola

Ingredients:

  • 350 g of Carnaroli rice
  • 1 shallot
  • 20 g of butter
  • 250 ml Gutturnio
  • to taste vegetable broth
  • 130 g of sweet gorgonzola
  • Salt and pepper to taste

Preparation:

  1. Fry the shallot: Chop the shallot and sauté it in butter.
  2. Toast the rice: Add the rice and toast it over high heat for a minute.
  3. Deglaze with red wine: Add the red wine and let it evaporate.
  4. Add broth: Continue cooking by adding hot broth in ladles.
  5. Stir in gorgonzola: Once cooked, add the gorgonzola and mix well.
  6. Serve: Serve hot, sprinkling with black pepper.
