Jano – Ovicaprino del Pardu.
Our Jano, whose name recalls that of the two-faced Roman god Janus, is a combination of pasteurized whole sheep and goat milk.
It has a soft paste, white tending towards pale yellow, compact, with a few eyes, with a full but not too sharp flavour.
It is characterised by its dynamism, also with longer ageing periods, which enhance its flavours and smells.
It’s flavor is very pleasant and sweet.
Use: it can be tasted and appreciated melted in soups or in the oven or, even better, near the fireplace.
Aging: more than 25 days.
Ingredients: pasteurized sheep milk, pasteurized goat milk, salt, rennet, lactic.
Shelf life: 1 years.
