Cheese refined in Marc & Barolo Wine.
Hard cheese made from cow’s milk, Occelli al Barolo matures very long in the cellars of Valcasotto. It is then aged for a further two months in Langa marc enriched with Barolo wine. It was considered the best “drunk” cheese in a test conducted by the experts of Slow Food 1999.
Use: A great cheese of meditation, ideal for with all dishes or as the base ingredient for risotto al Barolo.
Aging: 195 days.
Ingredients: cow’s milk (Italian Origin), Marc 10% (Italian Origin), Barolo DOCG Wine 4% (Italian Origin), Sea Salt, Animal Rennet (Calf).
