Long matured, semi-hard cheese produced with whole pasteurized cow’s milk (acidified).
Cheese with a semi – hard texture, very ripe, obtained from whole pasteurized cow’s milk and left to acidify. The flavor is delicate, refined and complex; moderately spicy, it is sometimes naturally marbled when very ripe.
Use: refined table cheese may also be used in the preparation of cheese based dishes.
Shelf life: 90 days.
